If you’re bored of the same old chicken for dinner, you have to try out this grilled chicken bruschetta recipe! Bursting with flavor and filled with satisfying lean protein, this recipe is sure to please.

This recipe features a rich bruschetta atop marinated balsamic chicken. Grilling meat, or cooking it at high temperatures, produces heterocyclic amines, carcinogenic chemicals also found in cigarette smoke. But have no fear! Marinating meats before grilling not only adds flavor but also drastically reduces the the production of these chemicals.

You already know that olive oil is good for you, but did you know having a dash of it with tomatoes actually helps you absorb antioxidants? From protecting our hearts to lessening sunburns, lycopene, the antioxidant that gives tomatoes their flaming hue, has a wide range of health benefits. Tomatoes are also rich in vitamins E and C, which also act as antioxidants, and are high in potassium, which is important for lowering blood pressure, bone health, and proper fluid balance.

Instructions:

  1. Whisk oil, vinegar, garlic, Italian seasoning, salt and pepper in a bowl.

  2. Place chicken in a dish or 1-gallon resealable plastic bag. Add marinade and refrigerate for at least 1 hour. Chicken can stay in marinade for up to 12 hours. Remove chicken from marinade.

  3. Preheat grill to medium. Grill chicken for about 7 minutes a side. Check temperature to ensure the thickest part of the chicken reads 165°F.

  4. (optional) If you do not have a grill, try broiling. Set oven on broil and place rack in center of oven. Cover a baking sheet with foil and add chicken. Cook for about 15 minutes, flipping once. Check temperature to ensure the thickest part of the chicken reads 165°F.

  5. While chicken cooks, use a sharp knife to finely dice tomatoes to about ¼ inch pieces. Finely chop onion and garlic and add to bowl. Chiffonade basil (place basil leaves inside each other, roll into a cigar, and closely slice.) Add olive oil, salt and pepper and stir.

  6. Place chicken on plate. Scoop bruschetta on top and serve!

  • ¼ cup balsamic vinegar
  • ¼ cup extra-virgin olive oil

  • 1 teaspoon salt

  • ½ teaspoon freshly ground pepper

  • 1 tablespoon Italian seasoning

  • 4 boneless, skinless chicken breasts (or about 1 pound)

Bruschetta:

  • 2 large tomatoes

  • ¼ cup red onion

  • 1 clove garlic

  • 3 large basil leaves

  • 1 tablespoon extra virgin olive oil

  • Salt and pepper, to taste.
